1 9" unbaked pie shell
a little jam
2 tbsp. butter
1 egg
¼ c. sugar
½ c. desiccated coconut
¼ tsp. baking powder

Directions:
Directions:
-Line pie tin with pastry (or use a store bought frozen unbaked shell)
-Spread a thin layer of jam (strawberry or raspberry works well)
-Melt the butter, stir in the beaten egg, sugar, coconut, and baking powder
-Pour the mixture on top of the prepared pastry and bake for 30 minutes @ 375º F
