2 large fleshy tomatoes
2 tbsp. Finely chopped red onion
1 - 2 cloves garlic, crushed
2 tbsp. Finely chopped fresh basil or 2 tsp. Dry basil
2 tbsp. Finely chopped fresh parsley or 2 tsp. Dry parsley
Good olive oil
Feta Cheese (optional)
Salt and pepper to taste
Baguette

Directions:
Directions:
Chop the tomatoes, stir in herbs and cheese. Combine in a bowl with enough olive oil to bind it nicely. Serve with fresh or on toasted baguette.
