5 lbs. potatoes, peeled and cooked in salted water
1 - 8 oz package cream cheese, softened
1 cup sour cream
1/2 cup butter or margarine, softened
1 tbsp. Onion powder
1 tsp. Salt, or to taste
1/4 tsp. Pepper
Butter for garnish (optional)
Paprika for garnish (optional)

Mash cooked potatoes. Add cream cheese in pieces. Add next 5 ingredients; beat until smooth and fluffy. Adjust seasoning if necessary. Turn into a 3 quart casserole. Make indentations with back of spoon and put a dab of butter in each. Sprinkle with paprika.

Cover and heat in a 350ºF oven until heated through. Bake 20 to 30 minutes for warm casserole and at least one hour for a cold casserole. This can be made a day ahead.
