1 pound lean ground beef
1 medium onion -diced
2 1/2 tablespoons chili powder
2 tablespoons ground cumin
1 sm can tomato paste
2 garlic cloves - minced
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper* -optional
1 can Rotel tomatoes with green chilis
1 can chili beans with sauce
1 can pinto beans
1 can black beans
1 (16 oz.) can red kidney beans, drained and rinsed
1 can chopped green chilis
1 to 2 16 oz cans tomato sauce
water as needed for desired thickness

Directions:

Brown ground beef. Add onion and garlic - cook until translucent. Combine with remaining ingredients in large soup pot. Bring to a low boil. Then reduce the heat to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally. Cover and continue to simmer for at least 25 minutes. Serve with soda crackers, shredded cheese and sour cream.
