1 can corn
1 diced bell pepper
¾ C diced red onion
2 T olive oil
¼ C cider vinegar
1 can black beans, rinsed and drained
1 tsp minced garlic
½ C julienned snow peas
Salt and pepper

Directions:
Directions:
Saute with olive oil bell pepper and red onion. Add remaining ingredients and continue sauteing until vegetables are tender. Season with salt and pepper. It can be served warm or cold.
