Ingredients: 4 large eggs ¾ c. shredded cheddar cheese, or whatever cheese you like ½ c. cottage cheese ¼ c. heavy whipping cream ½ tsp. salt ¼ c. diced green pepper ¼ c. cooked sausage

Directions:1. Add 1 c. water to Instant Pot and place the metal rack that came with the instant pot in the water. 2. In a medium bowl, add all ingredients and mix until combined. 3. Spray the egg mold with non-stick cooking spray. Then evenly divide egg mixture in the compartments of the mold. 4. Tightly cover the mold with aluminum foil. Lower the silicone egg mold into the Instant Pot, placing it on the rack. 5. Place the lid on the Instant Pot with the vent set to sealed. Press the steam button and set the timer to 10 minutes. 6. Once the cooking timer has stopped, allow the pressure to release naturally for 10 minutes, then release any remaining pressure before removing lid. 7. Carefully remove the silicone mold from the Instant Pot and allow the egg bites to cool before transferring out of mold and eating. |

Notes: These are made in an Instant Pot and you can make any mix of items in them that you want. To reheat, put 2-3 egg bites on a plate and microwave for 30 seconds. If you do not have the special egg bite mold you can place the mixture in 4 oz. mason jars. 3 egg bites make for a good breakfast.
