Shrimp Maison

12 Jumbo shrimp
2½ oz Julienne of carrot
3 oz Sliced mushrooms
3 Shallots, chopped
2 Garlic cloves, chopped
¼ cup Lemon juice
1 tbsp Parsley, chopped

Directions:
Directions:
Salt and pepper shrimps lightly, roll them in flour and place them in hot frying pan containing a tablespoon of vegetable oil; cook them golden brown on each side without overcooking them. Put them aside and keep warm. After discarding used cooking oil, put in one tablespoon of vegetable oil, add shallots, garlic, carrots, mushrooms, pinch of salt and pepper, and cook al dente (approximately 2 minutes). Then add lemon juice, chopped parsley, and beurre blanc. Bring to a boil, and pour over shrimps. Serve with rice pilaf.

¼ cup Lemon juice
4 oz Butter
1½ cup Chablis
1 tbsp White vinegar
2 Shallots, chopped
1 cup Heavy cream
Salt and Pepper

Directions:
Directions:
In a skillet put shallots, white wine and vinegar to boil, reduce it to one third. Add cream, reduce it again to a semi-thick consistency. Gradually whip softened butter into sauce. Then add lemon juice and salt and pepper to taste. Put aside and keep warm.
