15 oz white chocolate, chopped
2½ tsp butter, softened, divided
4oz peppermint hard candy (about 26 starlight mints)
8oz bittersweet chocolate, chopped
1oz unsweetened chocolate, chopped
5oz chocolate covered mint patties (10- 1½" York patties

In microwave safe bowl, combine white chocolate and 1½ tsp butter, set aside. Place peppermint hard candies in plastic bag and crush with rolling pin or meat mallet. Pour crushed mints into sieve and shake smallest pieces into white chocolate. Measure remaining mint pieces and set aside. (You should have no more then ¼ cup) Microwave white chocolate mixture on over power, stirring occasionally, until melted and smooth. In second microwave safe bowl, combine remaining 1 tsp butter with bittersweet and unsweetened chocolates. Chop 3 chocolate mint patties and refrigerate. Chop remaining patties and add to chocolates. Microwave on low power until softened. Stir until smooth. When white chocolate is melted and smooth, spread very thin layer on each of two parchment lined baking sheets. Stir reserved ¼ cup mint pieces into remaining white chocolate mixture; set aside. Drop small spoonfuls of dark chocolate on white chocolate layer. Distribute the chilled mint patty pieces through dark chocolate dollops. Spoon remaining white mixture over top. Cover bark with plastic wrap; roll to about ¼" thick. Allow to set up overnight in a cool place. Break up into uneven pieces. Makes about 2 pounds
