1 Onion, chopped
1 Green pepper, diced
1 Red pepper, diced
1 Yellow pepper, diced
˝ cup Olive Oil
8 Tomatoes, cored & skinned
˝ bunch Fresh parsley
˝ cup Red wine
1 tbsp Thyme
2 tbsp Oregano
1 tbsp Basil
1 tbsp Black Pepper
1 tsp Crushed Red Peppers
1 tsp Salt
2 tbsp Minced Garlic
8 cups Canned Diced Tomatoes
4 cups Tomato Puree
˝ cup Sugar

Directions:
Directions:
Sauté the onions, peppers and garlic in the olive oil over med-high heat. Core and peel the tomatoes, rough cut and add to the pepper and onion mixture. Add wine and allow to simmer for 1 hour. Add all other ingredients and simmer for one more hour. This is a good all-purpose marinara which can be used in place of spaghetti sauce and can be used in a number of recipes. Place in 1 pint sealed plastic containers, freeze and keep until needed
