4 oz Milk Chocolate candy bar (Hershey’s)
1¼ cup Milk
1 tsp Sugar
4 Egg yolks well-beaten, room temperature
Vanilla Extract to taste

Directions:
In a heavy-based small saucepan, heat milk, chocolate, vanilla and sugar over low heat until chocolate melts, stirring continuously. When liquid is just bubbling around the edge of the saucepan, remove pan from heat. Spoon a small amount of the hot liquid into the yolks to temper yolks. Add yolks to chocolate. Return to heat and continue stirring for 2 to 3 minutes without simmering until thickened.

Serve hot with poached pears, ice cream, or steamed puddings.
