6 Bratwursts
¾ cup Dark Beer 6 oz
3 med Red onions, halved and sliced
2 tbsp Olive oil
3 tbsp Ketchup or BBQ Sauce
Salt & Pepper To taste
6 Club Rolls

In a large saucepan combine the bratwursts and beer. Bring to a boil. Reduce heat and simmer, covered, for 3 to 5 minutes. Remove bratwursts, reserving the beer cooking liquid. Wrap bratwursts in foil and pack for tailgate.

In a large skillet cook the onions in the hot olive oil over high heat, stirring occasionally, about 10 minutes or until the onions are tender and beginning to brown. Add the ketchup or barbecue sauce and the beer cooking liquid. Cook mixture over high heat about 6 minutes or until the beer has evaporated and the mixture has thickened. Season to taste with salt and pepper. Wrap in foil packet and chill.

Place onion packet over medium¬ hot coals and grill directly uncovered for 5 minutes. Turn packet. Place bratwursts on the grill rack of an uncovered grill directly over medium-hot coals for 3 to 5 minutes or until bratwursts and onions are heated through and bratwursts are nicely browned. Split the rolls lengthwise. Hollow out bread leaving a 1/2-inch shell, fill with onion mixture. Add bratwurst.
