1 cup regular rolled oats
1/2 cup puffed rice cereal
1/4 cup pumpkin or sunflower seeds
2 TB grated parmesan cheese
1 TB fresh Thyme leaves
1/2 tsp salt
1/8 tsp freshly ground pepper
1 egg white
2 TB canola oil
1 tsp Worcestershire sauce
2 pounds Yukon Gold potatoes, peeled & cut into 1 inch pieces
2 TB butter, cut up
2/3 cup whipping cream
salt
freshly ground pepper

For Granola:
preheat oven to 300º. Line 15x10x1 baking pan with parchment paper & set aside

In a large bowl, stir together oats, rice cereal, seeds, cheese, egg white, oil & worcestershire sauce. Drizzle mixture over oat mixture; Toss gently to coat. Spread mixture into baking pan. Bake for 20 to 30 minutes or until golden, stirring occassionally. Cool on a wire rack.

Meanwhile, cook potatoes in salted water for 15 to 20 minutes or until tender; drain then return to Dutch oven.

Mash potatoes with a masher or electric mixer on low speed until smooth. Add butter; gradually beat in whipping cream to make potatoes light & fluffy. eason to taste with salt & pepper

sprinkle each serving with 2 TB of the granola
