1 pound of bacon
2 chopped onions
2 cups fresh sliced mushrooms
1 TB butter
4 cups frozen hash brown potatoes, thawed
1 tsp salt
1/4 tsp garlic salt
1/2 tsp pepper
4 eggs
1+1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese
Directions:
Directions:
Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain & set aside. Add mushrooms & onions to this skillet; cook & stir until onion is soft & translucent & mushrooms are tender, about 5 minutes.

Grease 13x9 casserole dish with a TB of butter. Place potatoes on bottom of dish. Sprinkle with salt, pepper & garlic salt. Top with crumbled bacon, then the onions & mushrooms

In a mixing bowl, beat eggs with the milk & parsley. Pour the beaten eggs over the casserole & top with cheese. Cover & refrigerate overnight

Preheat oven to 400º.

Bake for one hour or until set.
