Shepherd's Pie Recipe

1½ lb Ground lamb or beef
1 med Yellow onion, thinly sliced
1½ cup Mashed potatoes
½ cup Diced cooked carrots
1 cup Brown stock or prepared onion gravy)
2 tbsp Melted butter
Salt and pepper to taste

Directions:
Directions:
Brown onions thoroughly in large skillet or stock pot. Add ground lamb or beef, cook until browned, stirring frequently.
Add stock or gravy, make fairly moist to allow for absorption when baking. Season to taste. Layer carrots and meat mixture in bottom of deep 5-quart casserole dish (or individual casserole dishes). Spread with mashed potatoes on top. Drizzle melted butter on top, and criss-cross with a fork. Bake in preheated 350°F oven .for 40 - 45 minutes or when potatoes form browned, crispy crust.
