For STOCK:
1 whole chicken
3 carrots, cut up
1 yellow onion, minced
4 stalks of celery, chopped
2 bay leaves
1 tsp thyme
2 tsp sage
pepper, to taste
pinch of salt
5 qts of water

For SOUP:
3 cups strained stock
2 carrots, chopped
2 celery stalks, chopped
1 small yellow onion, chopped
1/2 tsp sage

For DUMPLINGS:
2+1/2 cups flour
3 tsp baking powder
1 tsp salt
3 TB Crisco
2 TB parsley, chopped or 1 TB of dill weed
1+1/4 cup milk

Directions:
Directions:
Simmer all stock ingredients in water for about 45 minutes.

Remove chicken from pot & cool until able to handle. Skin & debone chicken, then tear or cut into small pieces.

Strain stock, reserving 3 cups or so.

Add chicken & SOUP ingredients.Bring to a simmer while you are preparing dumplings.

Dumplings can be made with BISQUICK or with above ingredients.
Mix all dry ingredients, then cut in Crisco with pastry blender or 2 knives, Add parsley or dill, then stir in milk with wooden fork. Do not overmix.

Drop Dumpling dough by TB ontop of simmering soup.Simmer for 5 minutes with lid off, then cover & simmer 15 to 20 minutes longer( until dumplings are recognizable & soup has thickened)

Serve immediately
