4 Pork tenderloin medallions (2-3 oz each)
1 tbsp Vegetable oil
½ cup Red onion, chopped
1½ tbsp Fresh Thyme
¼ cup Raspberry preserves
2 tbsp Balsamic Vinegar
3 tbsp Orange juice
Pinch Ground black pepper
Pinch Salt

Directions:
Directions:
Pour oil in sauté pan and allow to get hot. Place the pork medallions in the pan and sauté for 3 minutes on each side. Add the red onions, balsamic vinegar and raspberry preserves and cook an additional 2 minutes or until the pork reaches an internal temperature of 145º. Finish with salt, pepper and fresh thyme.
