2½ lb Brisket, washed and trimmed
1 oz Vegetable Oil
1 tbsp ground black pepper
16 oz BBQ Sauce
8 oz Marinara Sauce
½ oz Tabasco Sauce
¾ lb Potatoes, washed, peeled, diced ¾”
¾ lb Carrots, washed, peeled, diced ¾”

Preheat oven to 350º and preheat grill or broiler. Lightly brush both sides of brisket with oil and season with pepper. Grill over open flame until seared and grill-marked on both sides, about 4 minutes each side. Remove from heat and set aside. In a bowl mix BBQ Sauce, Marinara Sauce and Tabasco Sauce. (You may adjust the amount of Tabasco sauce to your liking.) In a medium deep roasting pan, place about one cup of the sauce mixture and spread evenly. Place brisket in pan and cover with remaining sauce, cover tightly with foil. Bake for about 45 minutes or until just tender. Remove pan from oven, open foil carefully (very hot steam). Add diced vegetables and cover. Return to oven for about 15 minutes until vegetables are tender and cooked. Remove from oven and set on counter to rest for about 5 minutes. Open foil carefully. Remove meat from pan and place on clean cutting board. Thinly slice meat and arrange on plates. Add equal parts of vegetables and sauce to each plate and serve immediately.
