1 tsp Shallots, chopped
2 oz Mushrooms, quartered
1 tsp Garlic, minced
1 oz Beef Stock
1 oz Brandy
3 2 oz Beef Tenderloin Medallions
½ oz Cracked black peppercorns
2 tbsp Heavy Cream
½ cup flour
2 tbsp Olive Oil
Parsley (for garnish)

Directions:
Directions:
Coat both sides of medallions with cracked peppercorns and dredge in flour. Place oil in skillet and heat over med-high heat. Sear both sides of medallions, about 2 minutes each side. Add shallots and mushrooms cook for about 1-2 minutes. Deglaze with beef stock, add brandy, let brandy get warm, and carefully ignite. When flames go out, add heavy cream and cook to desired temperature. To serve, place medallions on plate and cover with sauce and mushrooms. Garnish with a sprig of parsley.
