2 lbs boneless chicken breast, pounded thin
2 eggs
1 T sugar
1 T Parmesan cheese
1/4 cup flour
1/2 stick butter
1/4 cup cooking sherry
1/4 cup lemon juice
1 tsp garlic powder
1 chicken bullion cube

Beat eggs and mix with sugar and Parmesan cheese. Heat oil in skillet. Coat chicken breasts in flour and shake off excess. Dip floured chicken breasts in egg mixture (don't do this until you are ready to put immediately in hot oil). Cook chicken until golden brown (does not have to be cooked all the way through).

Remove chicken from oil and drain on paper towels. Put chicken in baking dish.

Make sauce as follows: add butter, sherry, lemon juice, garlic powder and bullion cube to sauce pan until butter is melted. Pour sauce over chicken and bake covered at 350 degrees for about 20-30 minutes.

Can make ahead of time, but put sauce in a container separate from the chicken. When you are ready to bake the chicken, microwave the sauce which has hardened until melted and pour over chicken.
