⅛ cup Butter
⅛ cup Olive Oil
1½ med Onions, thinly sliced
1½ tbsp Minced garlic
1½ lb Italian Sausage
¾ cup White wine
2½ cup Diced tomatoes (with juice)
2 cup Heavy cream
1 tbsp Chopped parsley
1½ lb Penne Pasta
1 cup Grated Parmesan or Asiago cheese

Directions:
Directions:
Melt butter and olive oil in large pot over medium-high heat. Add onion and garlic and sauté until golden brown and tender, about 8 minutes. Add sausage and sauté until golden brown and cooked through, breaking up with back of spoon. Drain any excess drippings from pot. Add wine to pot and boil until almost all liquid evaporates. Add tomatoes with juices and simmer 4-5 minutes. Add cream and simmer until sauce thickens slightly, about 6-7 minutes. Stir in parsley. Season to taste with salt and pepper. Remove from heat. Cook pasta in a large pot of boiling salted water until tender but still firm to the bite (al dente). Drain and transfer to a large bowl. Add grated cheese to hot pasta and toss to coat. Pour sauce over pasta, toss to coat. Sprinkle with additional cheese and parsley flakes.
