2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced or pressed
1 bunch green onion, chopped and divided
1 green bell pepper, chopped
1 container cherry tomatoes, cut in half
1 pound peeled and deveined med shrimp - no tails!!!
¼ cp lemon juice
½ cup white wine
10 dashes hot sauce, or more to taste
Salt and freshly ground black pepper
8 ounces angel hair pasta
1/2 cup grated Parmesan

Directions:

Get a pan of water on to boil for the pasta.

Melt the butter and heat the olive oil in a large cast iron skillet over medium heat. Add the garlic and about half of the green onions and cook 2 to 3 minutes.

Add the shrimp and green pepper, then stir and cook for a couple of minutes. Add the lemon juice, wine, hot sauce, salt and pepper. Stir, cover and reduce the heat to low. Cook approx. 8 min.

Throw the angel hair pasta into the boiling water. Cook until just al dente, about 6 min. Drain, reserving a cup of the pasta water.

Add the pasta to the shrimp and toss, adding a splash of pasta water if it needs to be thinned. Spread the cherry tomatoes across the top, cover and heat another 3-5 min. to allow the pasta to soak up some juices and lightly cook the tomatoes.

Taste for seasoning, adding salt and pepper if needed. Top with the grated Parmesan and reserved green onion and serve immediately.

This is a Pioneer Woman recipe that didn't call for any vegetables. I added the green onion, green bell pepper and tomatoes because I love fresh veggies.
