Italian bread, cubed
1 English cucumber, thinly sliced
1 Onion, thinly sliced
16-18 oz. grape tomatoes, halved
3-4 avocados, diced
4 eggs, hard boiled and sliced

½ C olive oil
¼ C lemon juice
1-2 Tbsp Dijon mustard
1 Tbsp capers
2 tsp everything bagel seasoning
salt and pepper to taste

Feta cheese

Directions:
Directions:
Preheat oven to 400º
Cut bread into cubes, drizzle with olive oil, salt and pepper to taste
Spread on baking sheet and bake until lightly toasted, 10-15 min. Cool completely.

Dressing: Whisk olive oil, lemon juice, mustard and seasoning.
Mix sliced vegetables and toasted bread cubes in large bowl and drizzle with olive oil dressing.
Toss thoroughly. Top with eggs and Feta cheese.
