2 Tbsp panko breadcrumbs
2 Tbsp grated Parmesan cheese
2 (4 oz) boneless pork loin chops (or 4 small chops)
1/2 Tbsp olive oil
1/2 c low-sodium chicken broth
1 1/2 Tbsp lemon juice
1 Tbsp capers, drained

Directions:
Directions:
Combine panko and Parmesan cheese in a shallow dish; dredge pork in panko mixture pressing gently to adhere. Heat oil in a skillet over medium heat; add pork. Cook pork approx 4 min per side or until done. Remove and keep warm.

Add broth and lemon juice to pan, stirring with wooden spoon to loosen browned bits from bottom. Cook 3 minutes or until reduced to about 1/4 c.; stir in capers.

Serve sauce over pork
