Codfish Chowder Recipe

8 hours of bacon, diced
1 large onion, diced
1 red bell pepper, seeded & diced
salt & pepper to taste
2 cloves of garlic
1+1/2 TB seafood seasoning (OLD BAY)
1 (16oz) can chicken broth
3 red potatoes, cut into 1/2" cubes
4 ears of sweet corn, shucked & kernels cut off the cob
1/2 cup water, or as needed to cover (optional)
2 cups of whole milk, more or less as needed
2 TB butter
1 pound thick cod fillets, cut into 1 inch pieces
2 TB chopped fresh flat leaf parsley

Directions:
Directions:
Cook bacon in a soup pot over medium heat until crisp & brown, about 10 minutes. Remove bacon with slotted spoon, leaving drippings in the pot.

Cook & stir onion& red pepper until softened,( but not browned.)about 5 minutes.season with salt & pepper.
Stir in garlic & seasoning & cook 2 more minutes

Pour in chicken broth & stir in potatoes & corn, adding water if needed to cover all vegetables.Simmer until tender.

Add fish & milk & SIMMER (not boil) until fish is completely cooked (flakes with a fork). Add butter & stir until melted.

Ladle into a mug or bowl & top with parsley
