3 TB snipped fresh chives
3 TB snipped fresh basil
2 TB snipped fresh parsley
8 oz softened cream cheese
4 oz goat cheese
1/4 - 1/2 tsp cracked black pepper
1 minced clove of garlic
Assorted Crackers

For Dried Beef Cheeseball:
Prepare as below except omit basil & parsley. Beat in 2 oz dried beef, 3 TB chives & 1 tsp caraway seeds into cheese mixture. Serve with crisp rye crackers or party rye bread

Italian CheeseBall:
Prepare as below except substitute fontina cheese for the goat cheese & beat 2 oz of hard salami & 2 TB finely chopped roasted red peppers into cheese mixture. Serve with water crackers or baguette slices

In a shallow dish, combine 1 TB chives, basil & parsley & set aside. In medium bowl beat cream cheese & goat cheese with electric mixer on medium speed until smooth. Beat in remaining herbs & pepper & garlic. Form into a ball.

Roll ball in reserved herb mixture. Wrap in plastic wrap & chill for 4 to 24 hours. Makes 12 2 TB servings
