Coconut Poppy Seed Cake Recipe

1 pkg white cake mix
1/2 c coconut
1/4 c poppy seeds
3 1/2 c cold milk
1 t coconut extract (or vanilla)
2 pkgs. small instant vanilla pudding
8 oz Cool Whip

Directions:
Directions:
Prepare cake according to directions, adding coconut and poppy seeds to batter.
Pour into greased 13 x 9 pan. Bake at 350º for 20-25 minutes. Cool completely.
Whisk milk, extract, pudding for 2 minutes. Let stand 2 minutes or until soft set. Spread over cake. Spread with Cool Whip. Spread with toasted coconut, if desired.
