Leland's Roast 'Possum Recipe

1 large 'possum
1 club
1 heavy brick
¼ cup fresh lemon juice
3 tablespoons all-purpose flour
salt and pepper
1 teaspoon dried ground thyme
2 cups water
2 tablespoons butter
6 yams, peeled and halved lengthwise
4 apples, peeled, cored and quartered
1 cup light brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

First, find a 'possum.

Then, kill the 'possum with the big club.

NOTE: The possum may wake up after it's been kilt. If this happens, kill it again, but REAL GOOD so's it stays kilt.

Skin and clean your 'possum, removing as much fat as you can. Get rid of all the innards, and be certain to remove the small reddish musk glands from the small of its back and from under each foreleg between the shoulder and the rib. (If you're serving your in-laws, and they've overstayed, just skip a gland or two.)

Douse the 'possum with lemon juice and rub it in.

Preheat oven to 350*F.

Mix your flour, salt, pepper, and thyme. Rub the 'possum, both inside and out, with the flour mixture.

If your 'possum wakes up at any point in this recipe, kill it again. That's what the brick is for.

Now lay your 'possum on a rack in a roasting pan and pour in the water.

Cover with a tightly fitting lid or foil, and roast in the oven for 1 hour for a big 'possum.

Drain off all but about 1 cup of the juice from the pan and throw in your yams.

Dot each half yam with a generous dollop of butter. Cover again and continue to roast for another 45 minutes or until almost tender.

Now throw in the apple quarters. mix the brown sugar, cinnamon, and nutmeg, and sprinkle it over the yams and apples.

Uncover and roast for 20 minutes or until nicely browned and tender. Serve immediately.

This is my recollection of Daddy Leland Rhodes' recipe, Pistol Hill Community, Saline, 1994. All I actually remember is the first two steps: (1) Find a possum, (2) Kill the possum. The rest is lifted from "Soul Food Classic Cuisine from the South" by Sheila Ferguson. Grove Press 1989.
