Dough

6 cups flour
˝ cup melted butter
˝ cup milk
3 eggs at room temperature
1 cup sour cream
1 teaspoon salt

Directions:

Mix flour and salt. Beat milk, eggs, butter and sour cream. Add wet ingredients to the dry ingredients and mix into a soft dough. Kneed on a floured surface for 8-10 minutes, the dough will be nice and smooth. Cover the dough with plastic wrap and let rest for ˝ hour. Cut dough in half and roll out on a floured surface to a thickness of 1/16. Cut out circles the size of tuna fish can. Line up circles in a row, use a thin spatula or dough cutter to pick up circles.

Place about a tablespoon of filling on dough circle and fold in half. Pinch edges firmly closed. Place pierogis in boiling water for about 3 minutes. Removes with slotted spoon and place on baking sheet cover with Pam. Place in freezer to freeze before placing is freezer bags.

When ready to serve, sauté butter and chopped onion. Place pierogis in frying pan with onions and butter to brown. Add water to steam and finish cooking.
 

Cheese Filling

1 lb Farmers cheese
2 eggs, room temperature
1 tablespoon cream
1 tablespoon melted butter
1 teaspoon sugar
1 teaspoon lemon juice
4 scallions, sliced thin

Combine all ingredients, chill overnight. If recipe is tripled it will make 120-130 pierogis.
 

Potato Filling

10 lbs potatoes, boiled and mashed
2-8 oz cream cheese
1 cup butter
4 large onions, chopped
2-3 cup shredded cheese (Colby, white cheddar, Monterey Jack, etc)
Salt and pepper

Whip potatoes and cream cheese. Sauté onions in the butter. When soft add to potatoes. Add in cheese, salt and pepper and mix well. Chill over night.
 

Sauerkraut Filling

Mix together and chill overnight.
 

Buffalo Chicken Filling

1 rotisserie chicken, shredded
Red hot sauce
Blue cheese dressing

Ruben Filling

Tradition in our family is to have homemade pierogis, fish and mushroom soup on Christmas Eve. As out family has grown we now have this on Christmas Day.
