1 lb (4) chicken breasts, pounded thin
extra virgin olive oil for brushing
salt & pepper
1 Tbsp extra virgin olive oil
1 large shallot, minced (or garlic)
5 oz spreadable herb cheese
1/2 cup chicken broth
1 Tbsp lemon juice (about ˝ small lemon)
2 Tbsp chopped basil, tarragon, parsley, chives (as desired)

Brush both sides of chicken breasts with olive oil then season both sides with salt & pepper. Cook in olive oil over medium-high heat until no longer pink in the center. Remove to a plate and set aside.

Turn heat down to medium then add olive oil. Sauté shallots or garlic until slightly softened (about 1 min) then add herb cheese, chicken broth and lemon juice. Stir until creamy, then add fresh herbs. Spoon sauce over cooked chicken and serve.
