1¾ cups all purpose flour
2 tsps. baking powder
½ tsp. salt
1 tbsp. sugar
3 eggs, separated
5 tbsps. butter, melted
1½ cups milk
1 tsp. pure vanilla

Directions:
Directions:
Preheat waffle iron and grease lightly with cooking oil. Sift together dry ingredients. Add all wet ingredients except egg whites to dry ingredients and gently fold together until just moistened. Do not overwork, batter should have a slightly pebbled look similar to a muffin batter. Beat 3 egg whites until stiff and lightly fold into batter. Pour ¾ cup batter into preheated waffle iron and cook until steam stops, about 4-5 minutes.
