2 roasting chickens
1 tbsp olive oil
4 green onions, cut into 2" pieces
1 tbsp chopped garlic, divided
¼ cup oyster flavored sauce
¼ cup soy sauce
6 star anise

Directions:
Directions:
Preheat oven to 350º. Rinse and pat dry chickens. Rub olive oil over outside skin of both chickens. Put green onions, star anise and 1tsp garlic inside cavities of each chicken. Rub remaining 1 tsp garlic on outside of chicken. In small bowl, combine oyster sauce and soy sauce. Put some inside and outside of chickens, rubbing on the outer skin. Place chickens in roasting pan and cook for 1 hr on 350º basting 2-3 times while cooking. Cook until chickens are 165º when tested in thickest part of breast. Seperate fat from cooking liquid. Strain remaining juices in fine mesh strainer and heat until bubbling. Serve with chicken and a side of rice and favorite vegetable or salad.
