1 pound dried black eyed peas
1 tablespoon vegetable oil
4 strips thick sliced bacon, cut into 1/2 inch pieces
1 medium onion, diced
4 garlic cloves, diced
1 1/2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 teaspoon garlic powder
4 cups chicken stock
2 cups water
3 bay leaves

Directions:

Soak peas in a large pot of water overnight; drain and rinse.

Add vegetable oil to a large pot. Add bacon, onion, and garlic. Cook, stirring frequently, until onion and garlic are lightly browned. Add salt, black pepper, cayenne, and garlic powder; cook 1 to 2 minutes until the entire mixture is coated with the spices. Pour in the chicken stock and water; drop in bay leaves. Add the peas to the pot and cook for 1 to 1-1/2 hours. Taste for seasonings and discard bay leaves before serving.
