10 large (burrito) tortillas
12oz shredded chicken breast
4oz fat free cream cheese
4oz fat free sour cream
1 4oz can diced green chiles
1/2 cup shredded mexican cheese
1 packet taco seasoning
12oz green chile enchilada sauce (NOT red enchilada sauce) (mild or medium heat)

1. Preheat oven to 350

2. In a large mixing bowl, mix chicken with cream cheese, sour cream, chiles, taco seasoning, and about 1/4 cup enchilada sauce.

3. Assemble your enchiladas: fill a tortilla with your chicken mixture and cheese, and then wrap it like a burrito.

4. In a large casserole dish, coat the bottom of the dish with enchilada sauce. Place your wrapped enchiladas into the casserole dish-- as many as will fit. They can be a little snug.

5. Pour remaining enchilada sauce on top of the enchiladas. Top heavily with shredded cheese.

6. Bake for 10-15 minutes, or until enchiladas are heated through and cheese is melty. If cheese starts to burn, cover with foil until heated all the way through.

This dish is NOT spicy, unless you choose a spicy enchilada sauce. The diced green chiles only add a subtle heat.
To save time, use canned chicken breast instead of shredding it yourself.
