18oz sweet italian sausage (NOT ground sausage)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small yellow onion, sliced
4oz white mushrooms, sliced

Directions:
Directions:
Slice sausages into bite-sized rounds. In a large frying pan, lightly coat with olive oil, then add the sausage at medium-high heat. Cook until the pieces all have a nice sear on them, and then set them aside. They do not need to be fully cooked yet.

Re-drizzle some olive oil in your pan, and add your sliced peppers and onion. Sauté those with italian seasoning until halfway cooked. Add your mushrooms. Once the veggies are all almost cooked, return the cooked sausage to the pan, mixing it in well with the vegetables. Reduce to medium heat and cover. Let cook for ~10 minutes or so, and then uncover. Cook another 5 minutes and then serve over rice.
