Ingredients: 1 lb. lean ground beef 1 lb. bacon, sliced 1 package ground hot Italian sausage 1 large can tomato sauce 1 large can diced tomatoes 1 tin tomato paste 2 cans six-bean blend, rinsed 2 green peppers, seeded and chopped 2 red peppers, seeded and chopped 1 large onion, chopped 3 large carrots, sliced 4 stalks celery, sliced 1 jalapeño, seeded and finely chopped 1½ cups frozen corn (or 1 can, drained) 4 cloves garlic, finely chopped 1 tsp. salt 2 tsp. cayenne 2 tsp. oregano 2 tbsp. chili powder

Directions:Get out a large Dutch oven or a large slow-cooker and three frying pans! Start off by frying the bacon, ground beef, and sausage separately, draining each of them into an empty tin. As the meat is cooking, open the canned ingredients and put them in the pot. Chop the veggies, add them to the pot, and add seasonings. Stir in the cooked meat. The pot will be very full! Stir everything together really thoroughly, and let it cook LONG. It may seem dry, but after several hours you will see the carrots becoming cooked and it becoming saucier. It takes about 6 hours on high in the slow-cooker or about 4 hours at 350º F in the oven. Stir every hour. |

Notes: This chili is awesome when served over rice and with cheese buns. It makes enough to feed my family four meals. It freezes well and improves in flavour after a day or two. This was a vegetarian recipe that Mom adapted! It's very good without the meat, too. Obviously, it doesn't make as much!
