2/3 cup all-purpose flour
1/4 teaspoon salt
3 large eggs
1 1/2 cups whole milk
1 Tablespoon sugar
3 Tablespoons unsalted butter, melted (plus more for cooking and serving)
Lingonberry preserves for serving

Directions:
Directions:
Sift flour and salt together. In a separate bowl whisk together the eggs, milk and sugar. Add the milk mixture to the flour mixture and stir until smooth with no lumps. Stir the butter into the mixture, then let the batter rest for 30 minutes.

Preheat a cast-iron pan over medium heat. Swirl a little butter in the pan, then pour 1/3 cup batter into the pan. Tilt and and swirl so the batter covers the pan bottom. When the pancake is set and is easy to lift, flip to other side. Cook a few minutes more, remove to plate and keep warm while you finish the remaining pancakes.

Serve with lingonberry jam or desired fillings or toppings.
