3 cups all purpose white flour
1 tsp yeast soaked in 1/4 cup warm water
1/2 tsp yeast
1.25 cups warm water
2 tablespoons oil (I use olive oil)

Directions:
In a bowl whisk flour and 1/2 teaspoon sugar. I use my stand mixer with the dough hook. On low, add the yeast mixture and the oil. Slowly add 1 1/4 cup water. Mix to make a dough. Turn onto a floured surface and knead a bit to get a nice soft springy dough. Cover and let rise in a warm place for about an hour.

Knead the dough again for a few turns with floured hands. Divide into portions, size will depend on how big you want the finished product. I like to make them individual sized, so start with dough about the size of a tennis ball. Place on floured surface and roll (or pat) to make a disc about 5 inches across. Place on lightly greased cookie sheets.

Top each flatbread with Za'atar seasoning mixed with olive oil. How much you need with depend on how much of this you prefer on your flatbread. So mix up some and try it out, make more if you need it.

Bake at 350 F for about 20 min. Dough will brown lightly.
