3 or 4 lbs. pork spareribs
1 qt. sauerkraut -- I prefer Bavarian style, but whatever kind you use, get the good stuff
1 small yellow onion
2 cloves garlic (optional)

Directions:
Directions:
Preheat the oven to 325º F.

Place sauerkraut, undrained, into the bottom of a roasting pan. Slice the onion over the top. Sprinkle with garlic. Cut the ribs into serving size pieces if necessary to fit in a single layer in the pan and lay over top of the kraut. Cover tightly with pan lid or aluminum foil and place in the oven.

Peek in after an hour or so to be sure it's not getting too dry -- if it is just add a little water to keep it plenty moist. Bake for about 3 hours or until the meat is brown and falling off the bone.

Serve with mashed potatoes.

For as long as I can remember, this was my family's traditional New Year's Day meal to guarantee good luck and health in the new year. It will work with spare ribs, country ribs, or even meaty back ribs. If you're not really a sauerkraut fan you can add a chopped apple and 1/4 cup of brown sugar tossed into the kraut to cut the sourness and add extra flavor; but you MUST have a taste of the kraut to get the good luck! The absolutely most important thing is to get really good, fresh kraut not the stuff in a tin can. The best I ever had was home made by my Slovakian cleaning lady, Maria, and given to me as a gift -- that was a really lucky year!!
