1 can shoepeg corn (drain)
1 can black beans (drain)
1 can diced tomatoes w/ chilies
1 cup celery, chopped
1 cup cucumber, chopped
½ cup red onion, chopped
½ cup light Italian salad dressing with cheese
Cilantro to taste
Salt and pepper
I like to add grated Parmesan cheese 1 or 2 tablespoons

Add all ingredients to a bowl mix together. Refrigerate.
