Peaches, peeled
2 - 3 sticks of cinnamon
¼ t whole cloves
¼ t whole allspice

Syrup:
4½ c sugar
3½ c water
½ - ¾ c vinegar

Directions:
Directions:
Pack peeled raw peaches, cinnamon, cloves and allspice into hot quart canning jars. Make syrup by boiling sugar, water and vinegar together. Boil until sugar dissolves. Cover with boiling hot syrup and process quarts 25 minutes.

This is a handwritten recipe and it isn't quite the same as the Farm Journal recipe - maybe this is Mom's adaptation of that one. We never added ginger and I think we canned them directly in the Mason Jars. We didn't bother with pre-cooking them or letting them stand overnight.
