1 T Knox gelatin
¼ c cold water
¼ c sugar
½ c milk
¼ t salt
1 c cottage cheese
1 T lemon juice
½ t lemon rind
½ c cream or evaporated milk
½ t vanilla
½ c powdered sugar
1 egg, separated

Directions:
Directions:
Beat egg yolk slightly. Add sugar, salt and milk. Cook in a double boiler until it is custard consistency. Soak the gelatin in the ¼ c cold water. Add this to the hot custard and stir until dissolved. Add cottage cheese, lemon juice and lemon rind. Cool. When it begins to thicken, fold in whipped cream, beaten egg white, powdered sugar and vanilla. Pour into graham cracker crust; chill until set.
