Carrot Cake


Ingredients:

1½ cups flour
1½ tsp. baking powder
1¼ tsp. baking soda
¾ tsp. salt
2 tsp. cinnamon
1½ cups sugar
1 cup oil
3 eggs
2 cups grated carrots
½ cup chopped pecans or walnuts (optional)

Directions:

Heat oven to 350º F. Combine dry ingredients except sugar. Then add sugar, oil, and eggs. Mix well. Stir in carrots. Bake for approximately 40 minutes (check for doneness).
 

Cream Cheese Icing

¼ cup margarine
1 pkg. cream cheese
2 cups icing sugar
1 tsp. vanilla

Directions:

Blend all of the ingredients until smooth and fluffy. Spread on cooled carrot cake.

If you double this recipe, bake for at least 45 minutes. I've made this recipe in muffin tins (because who doesn't love a little cake you can call a muffin?) and they really puff up so make them small - maybe 18? Bake for 30 minutes.
I don't care for cream cheese icing so I usually don't ice this cake. To keep it moist, however, I learned this little trick... You make a sugar-water mixture and mist it lightly onto the cooled cake from a spray bottle. It makes a bit of a crunchy top on the cake that is really satisfying.
