Ingredients: 1½ cups flour 1½ tsp. baking powder 1¼ tsp. baking soda ¾ tsp. salt 2 tsp. cinnamon 1½ cups sugar 1 cup oil 3 eggs 2 cups grated carrots ½ cup chopped pecans or walnuts (optional)

Directions:Heat oven to 350º F. Combine dry ingredients except sugar. Then add sugar, oil, and eggs. Mix well. Stir in carrots. Bake for approximately 40 minutes (check for doneness). |

Ingredients: ¼ cup margarine 1 pkg. cream cheese 2 cups icing sugar 1 tsp. vanilla

Directions:Blend all of the ingredients until smooth and fluffy. Spread on cooled carrot cake. |

Notes: If you double this recipe, bake for at least 45 minutes. I've made this recipe in muffin tins (because who doesn't love a little cake you can call a muffin?) and they really puff up so make them small - maybe 18? Bake for 30 minutes. I don't care for cream cheese icing so I usually don't ice this cake. To keep it moist, however, I learned this little trick... You make a sugar-water mixture and mist it lightly onto the cooled cake from a spray bottle. It makes a bit of a crunchy top on the cake that is really satisfying.
