Cilantro Lime Rice
2 cups cooked rice (I use 1 cup of uncooked rice and it makes a bit more)
1 tbsp freshly squeezed lime juice
1 tbsp minced fresh cilantro
1/2 tsp grated lime zest

Spiced Beef
1 1/4 (567 grams) extra lean ground beef
1/2 cup diced onions
1 tsp minced garlic
1/4 cup ketchup
1/4 cup water
2 tbsp taco seasoning

Toppings
Corn
Black beans
Salsa
Guacamole
Sour cream
Shredded cheese
Chopped green onions
Fresh cilantro

Heat a 10” skillet over medium high heat. Add beef, onions and garlic. Cook and stir until beef is cooked through and lightly browned. Add ketchup, water and taco seasoning. Mix well and cook until mixture is hot and bubbly. Remove from heat.

Combine hot rice with lime juice, cilantro and lime zest.

To assemble burrito bowls, equally divide hot rice between 4 serving bowls. Top with hot spiced beef and toppings of your choice.
