1 cup leftover mashed potatoes
1 egg
1/2 cup flour
salt to taste
1/2 stick butter
1/2 onion chopped

Directions:
Directions:
Mix together potatoes, egg, flour and salt (if needed, mashed potatoes are already seasoned). Form the mixture into balls. Drop into salted boiling water. The dumplings will sink to the bottom, but will rise to the top as they cook. Cook for about 10 minutes. (water should be boiling gently). Remove from pan with a slotted spoon and place in a serving dish. Pour the cooked butter and onion over the top (saute onion in the butter until onion is limp, not browned)

Recipe may need to be adjusted based on the density of the mashed potatoes. You may need a bit more flour if the mixture is too wet. You can judge this when you roll the balls, they should hold together but not be too firm.
