1 qt beer
1 large or 2 small eggs
⅛ c seasoning salt
1 t hot sauce, or more (depends on your taste buds)
5½ c all-purpose flour
4 - 5 large sweet onions

Directions:
Directions:
Combine ingredients, except onion rings, into a large bowl. Cover and allow batter to sit at room temperature no less than 3 hours. Meanwhile, slice onions into rings and keep in ice water until ready to use. Drain onions well. Stir batter. Dip onion rings in batter and fry in hot oil until golden brown. (Oil should be about 325 degrees to 350 degrees.) Do not shake excess batter off rings. Cook until golden brown. These may be held in a 200 degree oven for about 5 hours or may be frozen. To reheat from frozen rings, arrange on a cookie sheet and place in 400 degree oven for 4 to 6 minutes. When rings are through frying, drain on paper towels to absorb oil.

These are delicious! This batter is also good with other vegetables, such as zucchini, broccoli, cauliflower or sliced carrots.
