2 c. water
2-3 c. cubed peeled potatoes
1/2 c. chopped celery
1/2-1 c. chopped carrots
1/4 c. chopped onion
1 tsp. salt
1/4 tsp. pepper
1/4 c. butter
1/4 c. flour
2 c. milk
2 c. shredded sharp cheddar cheese
1 - 15-oz. can whole kernel corn, drained (optional)
1 1/2 c. cubed cooked ham

In a large saucepan, bring water, potatoes, carrots, celery, salt and pepper to a boil. Reduce heat, cover and simmer for 8-10 minutes until vegetables are just tender. Remove from heat, do no drain. Meanwhile in a large saucepan, melt the butter. Add onions and sauté until tender. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add milk mixture to the vegetables mixture and return to low heat. Add corn and ham; heat through, stirring occasionally. Add cheese to melt. EXCELLENT!
