Dumplings:
2 eggs
2 c flour (enough flour to make a soft dough)

Filling:
2 c dry curd cottage cheese (may substitute regular cottage cheese that has been rinsed so only the curd is left)
¼ c onion tops or chives
Salt and pepper to taste

Topping (if desired):
½ c onion diced
1 c half and half
¼ c sour cream

Directions:
Directions:
Mix together 1 egg, flour, and enough water to make a soft dough. Roll out to a ⅛ inch thick circle on a lightly floured surface and cut into 3 inch squares.

For filling: Mix 1 egg, cottage cheese, onion greens, salt, and pepper. Put a tablespoon of cottage cheese mixture in the center of each square. Pull opposite corners together, pinch, and seal each square to make a dumpling. Make sure the squares are sealed tightly. Gently boil dumplings in salt water about 10 to 15 minutes. Drain and fry in ½ c to 1 c butter to lightly brown. If you wish, sauté the small diced onion. Add half and half and sour cream to the onion. Pour over dumplings.

Fruit Kniffle: May use above dumpling recipe. Instead of cottage cheese mixture use cherry pie filling or other fruit filling. Do not use the topping.
