2.5 lb pork roast
2 fuji apples, cored and chopped
1 medium sweet potato, chopped in large pieces
1 medium onion, chopped in large pieces
1 tbsp minced garlic
1 cup apple juice (or white grape juice or water)
1 tsp sea salt
½ tsp black pepper
½ tsp ground cinnamon
½ tsp dried basil
½ tsp dried rosemary
½ tsp dried marjoram
¼ - ½ tsp crushed red pepper flakes (to taste)

Directions:
Directions:
1. Spray the bottom and sides of a 4.5 quart slow cooker.

2. Place half of the apple, sweet potato, and onion chunks in the bottom of the slow cooker. Place the roast on top, followed by the juice.

3. Sprinkle the herbs and spices over the roast, followed by the remaining chunks of apple, sweet potato and onion.
4. Cover and cook on low for 6-8 hours or high for 3.5 – 4.5 hours.

5. Once finished, remove and slice the pork roast. Scoop the apple, sweet potato, and onion chunks
into a bowl and mash with a potato masher.
