7 duck eggs (or 8 - 9 regular eggs)
6 c flour
˝ c water, or more if needed.

When cooking as standalone noodles, add:
Butter
Bread Cubes
Salt and pepper to taste

Mix and knead dough until smooth and elastic. (I use my Kitchen Aid mixer. Grandpa and my Mother both mixed and kneaded by hand.) Divide the dough into three equal parts and form three balls. Let the dough sit for 10 to 15 minutes. Roll dough into a very thin circle on a floured surface. Let circle partially dry on a flat surface being careful to check it during the day so it doesn’t get so dry that it cracks while rolling it up. When circle is partially dry, roll up the dough. Using a sharp knife cut the dough into fine noodles about 1/16 inch thick. (They used a tea towel and placed the circle of dough on the towel that was laid on a bed.) Sprinkle the cut noodles on the tea towel and let dry. Noodles can be used in soup or as a standalone.

As a standalone, we would boil the noodles a few minutes in salted water. While they were cooking, we put one or two cubes of butter in a skillet. Let the butter just begin to burn and add a handful or two of dry bread cubes. Sauté the cubes and add salt and pepper to taste. Pour noodles into butter. Stir and fry until a few of the noodles begin to brown. Remove from heat and serve.

FAMILY STORY - MAKING NOODLES

Nina said: "As a little girl, I loved to watch Grandpa cut the noodles. He would use one hand to place two fingers at the end of the roll of noodle dough and the other hand would hold the knife. I can still hear the sound of the knife going through the noodle dough to the wood cutting board in a steady and quick rhythm - bthrrrip, bthrrrip, bthrrrip. They were the finest most even noodles. I never saw him cut his fingers, and the blade must have been right next to them. My grandkids love these noodles and they are a favorite at both Christmas and Thanksgiving dinners. Growing up, the noodles were also a family favorite at our gatherings and became one of the most requested entrees of our extended family."

Lisa said: "My Mom, Bev, made chicken soup for Anna Hopp at Rose's house. Anna was exclaiming over Bev's ability to make fine, evenly cut noodles, but Rose interrupted to tell her "No, Bev didn't make them; they were Lipton Chicken Noodle Soup from a box." Mom was devastated.
