4 lbs Beef Short Ribs (bone in)
1 T Olive Oil
1 Carrot finely chopped
1 Medium Onion chopped
1 Bottle Dry Red Wine
6 Cloves Garlic minced
6 springs Thyme
1 T Worcestershire sauce
3 T Tomato Paste
1 T Brown Sugar
1 T Smoked Paprika
4 dashes Italian seasoning
salt & pepper to taste
1 T cornstarch

Directions:

1. Add olive oil to large heavy skillet on medium heat. Season short ribs with salt & pepper.

2. Once oil is hot add short ribs. You'll likely need 2 batches. Don't crowd pan. Sear 3 - 4 minutes per side.

3. Add all other ingredients to crockpot except cornstarch. Give a stir. Add short ribs in as even a layer as possible. Cook on low 7 - 8 hours.

4. Once ribs are done skim fat off surface. Mix cornstarch with cold water til smooth. Stir into crockpot. Let sit 5 minutes til thickened.

5. Serve with mashed potatoes.
